Dinner Tonight

Nothing gets me more excited than simple, flavorful, and fresh food.

Dinner took me about 15 minutes to put together (with a bit of prep beforehand).

Here’s what I ate:

  • Baked spaghetti squash (thanks to my neighbor’s garden, thanks Leah!) topped w/ homemade tomato sauce (did I mention we’re drowning in tomatoes!?)
  • Quinoa with black beans (plain quinoa left over from my dinner last night, canned black beans flavored with a sprinkle of cumin powder, smoked paprika, sea salt)
  • Simple green salad w/ oil-free raspberry vinaigrette (romaine lettuce, shredded carrots, raw sunflower seeds, chopped tomatoes, celery)

For dessert? Banana frozen yogurt (just straight frozen banana put through my Champion juicer with the blank plate). Mmmmmmmmmmmmm. Yum.
